Mexican Street Corn (Elote)

This is my version not in any way authentic. It's a very last minute attempt and I don't have the majority of the ingredients.  In this version the corn is just steamed.  Typically the corn is grilled to have that smoky flavor.  I think I captured the essence of this dish.  I hope you will give it a try.

Adapted from Simply Recipe.

Mexican street Corn

8 medium ears of sweet corn
1/2 cup Dahi 3% plain yogurt (Mexican crema is better)
1/2 cup mayonnaise
1/2 cup minced cilantro
2 cloves garlic, minced
1/4 teaspoon ground chipotle pepper
2 drops lime oil ( 2 teaspoons lime zest)
2 tablespoons apple cider vinegar
1/2 cup baby bell ( baby bell is a milder softer cheese ecause it's what I have, cotija cheese is originally used)

  1. Boil or grill corn until kernels are soft.
  2. Sauce: In a small bowl mix together yogurt, mayo, cilantro, garlic, ground chipotle pepper, lime oil and apple cider vinegar.
  3. Brush cooked corn with the sauce and sprinkle with cheese.
  4. Serve while it's hot.

Minion Cupcake Cake

This is how I made my Ube (purple yam) Minion cupcake..  Enjoy! Come see how I made it in this youtube video.  Don't forget to subscribe for more updates! Used Wilton tip 1M to create the rose pattern on the cupcake.  Start pipping from middle cupcake and out. To create the eyes...  You will need 3 different sizes of round cookie cutter (3", 2.5, 1 inches, white fondant, grey fondant (goggle frame), light brown fondant (iris), and black fondant, large ball tool, and piping gel.  Cut out a 3" circle out of grey and white fondant.  Set aside in large ziplock bag.  Cut out a 2.5" circle in the middle of the grey circle.  This will be the frames for the minions goggles. With a small brush apply a small amount of water along the perimeter of the white circle.  Lay down the grey frames on top of the white circle.  Using a ball tool (See pic bellow) make an indent on the bottom centre of the white circle.  Place the brown 1" circle in the di

Easy Soccer Ball cake

This soccer ball cake is easy to make.  To create the soccer ball shape I used a approximately 8" Stainless steel bowl, and an 8" round cake pan. You may use glass bowl but you have to reduce cooking time.    This is how I assembled my soccer cake. The naked cake... As you can see there are 3 layers to this cake.  The bottom layer is 8" round cake.  The top layers are just one bowl shaped cake that I split into two sections.   I stack the layers first to see how they fit together.  I noticed that the middle layer overhangs a bit on the 8" round cake.  I trimmed off the excess cake using a sharp carving knife.   Each layer is filled with chocolate buttercream. Chocolate crumb coat...  This part can be omitted since we are applying the buttercream with an icing tip.  I crumb coated chocolate for added flavor because having just the white vanilla icing is too boring.   Do not worr
