Tiger King Cookie

Hey there! This is my Tiger King cookie I turned a simple shortbread  into the Tiger King, Joe Exotic!   At a time like this I just want to do something fun and new.  Cooking decorating is new to me.  A little rusty but over all not bad.  
I used shortbread as a base cookie.  It's buttery and not too sweet.  Perfect pair with the already sweet royal icing that I am using to decorate the cookie.  
This shortbread recipe has only 3 ingredients: flour, butter and icing sugar.  Everything is whipped together on a stand mixer and then chilled for 15 to 30 minutes.
Whipped Shortbread
1 cup butter, softened 2 cups cake & pastry flour or all purpose flour 1/2 cups icing sugar
Preheat oven to 325 F. Combine butter, sugar, and flour and mix with an electric mixer until light and fluffy (10 minutes or less).  Gather up dough into a circle,  then flatten with the palm of your hands.  Wrap in plastic wrap.  Chill in fridge for 15 to 30 minutes.  Take out of the fridge and let sit for 5 min…

Pilipit - Filipino Twisted No Yeasts Donut

Pilipit is a Filipino style donut.  It has a crunchy outer shell and a soft inside.  It is similar to bannock or elephant ears.  These are similar to donuts and leavened with baking powder.  Traditionally coated with sugar or glazed

I coated mine with powder sugar kind of like their elephant ears counter part.  But you know what they are perfect on their own without sugar.  The dough is sweet enough to hold on its own.  


The ones that I made are for some reason soft on the inside.  I'm certain it's because I rested my dough for more than 30 minutes instead of the usual 15 minutes.  If you guys want more crunch in your pilipit just proof it (resting stage) for 15 minutes or less.

1/4 cup sugar
1/4 teaspoon salt
1 teaspoon baking powder
1 tablespoon Vegetable oil
2 cups all purpose flour ( add a bit more if the mixture sticks to your hand)
